The Elephant Heart plum is a popular heirloom Japanese variety (Prunus salicina). Ripens mid- to late season (late August to September/October depending on region). Fruits are large in size (typically 2.5–3 inches or 7–8 cm in diameter), heart-shaped (oblong with rounded shoulders tapering to a point), distinctive and eye-catching.Skin is smooth and mottled, ripening from green-bronze or tawny to dark reddish-purple with a powdery bloom; flesh is deep ruby-red to blood-red, firm yet juicy, sweet with rich, complex flavor (mild tartness, tropical/vanilla notes when fully ripe), freestone or semi-freestone.Versatile for fresh eating, snacking, salads, canning, preserves, jams, baking, cooking, and freezing—prized for its dramatic color and pronounced taste.
