The Gem pear is a popular modern European variety (released by USDA in 2015). Ripens mid-season (about 20 days after Bartlett, typically late August to early September). Fruits are medium to large in size (typically 2.5–3.5 inches long), slightly globular to rounded pear-shaped.Skin starts light green and ripens to bright yellow with a red blush (up to 35% on sun-exposed sides); flesh is creamy white to off-white, juicy, smooth, and melting with a sweet, mildly aromatic flavor—delicious crisp like an Asian pear when firm or soft and buttery when fully ripened.Versatile for fresh eating (snacking or salads), baking, cooking, canning, preserves, and excellent long-term storage without superficial scald.
